To accompany the hamburger we suggest you a radicchiosalad, rocket and fennel dressed with orange peel
(just the orange part because the white one is bitter),embellished by some mint, thyme and fennel leaf.


Utilize clarified butter to cook the hamburger: you willachieve an exquisitely crunchy surface.
Since it has a higher smoke point compared to the others, itallows to reach high temperature without degrade.

Clarified butter (250g) preparation

  1. Put the butter in a small, thin and tall pot with the bottom quite thick, in a way that heat will uniformly distribute, otherwise thebutter can burn. In alternative you can melt him down in bain-marie without mixing;
  2. After 20 minutes the butter will be completely melted and there'll be a white layer deposited on the bottom of the container. Thelather must be removed with a skimmer;
  3. At this point turn off the cooker and leave the melted butter to rest until all the casein is completely separated and is on the bottomof the container;
  4. Now we need to separate the two parts. We are interested in the yellow surface: gently pour it into a container by passing itthrough a sieve being very careful on leaving the white part on the bottom;
  5. At this point it's possible to put the clarified butter (at least 250gr) in the fridge, because it must be solid when we'll need it;

Mixture preparation

  1. Peel and grate the potatoes, mince very finny the shallot and grate the half lemon peel. Pay attention to eliminate the water that willget out from the potatoes by grating them, otherwise you won't be able to work the dough;
  2. Put them together in a bowl with the egg, the corn flour, a pinch of salt and a pepper dusting. Then mix and combine well the whole.

Hamburger preparation

  1. Obtain from the mixture 8 big meatballs and insert them at the center of each, one speck slice and a bit of ricotta;
  2. Flatten the meatballs in order to make some hamburgers;
  3. Brown the hamburgers in a pan with clarified butter on both sides in order to obtain a golden color;
  4. Put them in a oven already at 180°C for 10-15 minutes, covered with tinfoil in order to not burn them;
  5. When cooked, bring them to room temperature for 5 minutes in the oven already turned off and then you can serve.

Plate composition

  1. Bring the hamburgers on the table while they are hot, perhaps along with a fresh mixed salad.
