For pasta brisèe

  1. Blend the ingredients in a mixer to obtain a homogeneous dough. Put the dough in a plastic wrap and leave to stand.
  2. Line a 28 cm mould with baking paper. Roll out the brisé and place it on the mould. Let rest 10 minutes in the fridge.
  3. Prick and cook for 15 minutes in the oven.
  4. Remove it from the oven and allow to cool.

For filling

  1. Combine all ingredients except flowers.
  2. Pour over the brise and decorate the top with flowers and a sprinkling of Parmigiano cheese.
  3. Bake at 170°C for 25 minutes. Serve.
